BUGZYS BLUEBERRY MUFFINS

Ingredients:

1 Tbs flax meal
3 Tbs warm water
¾ Cup Almond milk
½ Cup Applesauce
3 Tbs Agave syrup
2 Cups All purpose (AP) flour
1 Tbs baking powder
¼ Tsp sea salt
1 Cup Blueberries




Directions:

Preheat oven to 400° F.  Combine the flax meal with the warm water in a separate bowl and set aside.  In a separate large bowl, mix the milk, applesauce and agave.  When the flax meal and water has thickened , add it to the milk mixture and combine.  Stir in the flour, baking powder and salt all at once.  Only mix until the flour is moistened (the batter should be lumpy).  Fold in the blueberries.  Using a non-stick muffin tin, divide the batter among the cups.  Bake 20-25 minutes or until golden brown.
