Crispy Sweet Potato Cake Patty


Crispy Sweet Potato Burgers

Ingredients:

1 large sweet potato
1/2 cup cooked brown rice
2/3 cups vegan italian bread crumbs
2 TBS oil
1/4 cup diced onions
1/4 cup diced pepper
1/2 TSP garlic powder


Preparation:
Peel, chop and boil 1 large sweet potato, about 20 minutes until soft and drain.  Mash rice and potato together and add onions, peppers, garlic powder and bread crumbs.  Split mixture into 4 equal parts and form patties.  Press patties into left over bread crumbs.  Pour oil into pan and fry the patties for 5 minutes on each side or until they are golden brown.  Serve plain or on a bun with lettuce and tomato and your favorite condiments.
