Vegan Mozzarella Cheese



Ingredients:
1/4 C. Cashews
1 Tsp Lemon Juice
1 Tsp Salt
3 Tbs Corn Starch
1/3 C. Melted Coconut Oil (denatured)
1.5 C. Water
1 Tbs Maple Syrup


Directions:
Soak nuts in boiling water for 15 minutes.  Drain and put into blender.  Add remaining ingredients to the blender and blend until smooth.  Pour into a sauce pan and cook over medium heat stirring constantly until it thickens and starts to boil.  Remove from heat and pour into mason jar and refrigerate for 2 hours.
