Vegan Sweet Potato Flatbread Pizza

Quick and easy recipe whether you are by yourself or for the whole family.  When time is of the essence make this healthy vegan pizza.

Vegan Sweet Potato Flatbread Pizza
Ingredients:
1 sweet potato flatbread
2 Tbs pizza sauce
1/3 C. each medium diced onions and bell peppers
1/3 C. sliced black olives
1/3 C. sliced mushrooms
1/4 C. to a half package non dairy cheese shreds or vegan cashew 
            mozzarella cheese (recipe below)
Directions:
Spread sauce onto flat bread.  Sprinkle onions, peppers, olives and mushrooms evenly around the bread.  Dollop the cashew cheese around to your liking.  Cover with cheese shreds and bake at 350° for 10 minutes or until the cheese is melted.  Enjoy!

Cashew Mozzarella Cheese Recipe
Ingredients:
1/4 C. Cashews
1 Tsp. lemon juice
1 Tsp. salt
3 Tbs. corn starch
1/3 C. coconut oil melted (coconut smell removed)
1.5 C. water
1 Tsp. maple syrup
Directions:
Soak nuts in boiling water for 15 minutes. Drain and put into blender.  Add the remaining ingredients to the blender and blend until smooth.  Pour into a sauce pan and cook on medium heat stirring constantly until it thickens and starts to boil.  Remove from heat and pour into mason jars.  Refrigerate for 2 hours.
