Vegan Stuffed Magical Mushroom Caps

Veganized BBQ stuffed mushrooms.  A low calorie, high protein snack or meal.  Another meatless Monday favorite!

BBQ Sauce-
2 Tbs Maple Syrup
2 C. Ketchup
1/2 C. Mustard
1 Tsp Liquid Smoke
1 Tbs Vegan Worcestershire Sauce
1 Tsp each Salt, Fresh Ground Black Pepper, Smoked Paprika and Garlic Powder.
1/4 C. ACV (apple cider vinegar)

Stuffing- 
Chopped mushroom stems from the caps you are using
1/4 C. Diced Onion
1/4 C. Chopped Walnuts
2/3 C. Non-dairy Mozzarella Cheese Shreds
Mix all ingredients together and set aside.

Put Mushroom caps that have been washed, dried and oiled onto an aluminum foil covered baking sheet gill side up.  Lightly cover caps with BBQ Sauce and then place stuffing onto the top of the mushroom.  Drizzle more sauce on top of the stuffed mushroom caps and bake at 425° for about 25 to 35 minutes.
