Vegan Cashew Cheese and Mac

Homemade Vegan Cashew cheese added to freshly cooked macaroni. A simple dish the whole family can enjoy.

Ingredients:

1 C.  cashews 
1/4 C. nutritional yeast
1/2 C. coconut oil
2 Tsp. lemon juice
1 Tsp. apple cider vinegar
1/2 Tsp. garlic powder
1 Tsp. salt
2 C. water
2 Tbs. turmeric

Directions:

1.  Cover cashews in boiling water and let sit covered for 2 hours.
2.  Drain water and put cashews and the rest of the ingredients except for the turmeric into the blender.
3.  Blend until smooth liquid is formed.
4.  Pour into a pot and cook over medium heat stirring constantly for 2 minutes.  Add turmeric and continue stirring until liquid thickens.
5.  Pour into greased ramekin and chill for 2 hours.
6.  Cook pasta per instructions on box.
7.  Drain pasta and add 1/4 to 1/2 cup of cashew cheese to warm pasta.  Add 1/4 cup almond milk to loosen if needed.
