No chicken chickpea salad with a tomato garnish
Ingredients:
1 Can Chickpeas
1 Green Granny Smith Apple
1/2 Cup Craisins
1/2 Cup Chopped Walnuts
1/2 Cup Vegan Mayo
2 Tbsp mustard
1/2 Tsp salt, pepper and garlic powder
1 dash Chipotle ground pepper
Directions:
Open, drain and rinse chickpeas and set to the side. In a mixing bowl combine
mayo, mustard, salt, pepper, garlic powder and chipotle pepper and set to the side.
Put the chickpeas into another bowl and semi mash them. Add to mixing
bowl. Chop walnuts. Add walnuts and chickpeas to the mixing bowl. Mix all
ingredients until totally incorporated. serve on a bed of lettuce and enjoy.
